Nduja is a very spicy spreadable sausage, an emblem of Calabrian typicity. It is prepared with pork shoulder, back fat, belly and spicy Calabrian peppers. After the drying process, it is smoked and is usually served on toasted bread, in a Ragù or tomato sauce for pasta.
