The Baraggia Biellese e Vercellese rice is a DOP product, cultivated in the rice paddies between the Elvo and Cervo creeks and the Sesia River. The rice varieties recognized under the protected denomination of origin are: Arborio, Carnaroli, San Andrea, Gladio, Lotto, Balilla and Baldo. This rice is commonly used for the preparation of soups and risotto, such as saffron risotto.
